Chickens don't just lay white or brown eggs, some lay green, blue or chocolate colored eggs. While arguably they taste the same, green, blue and chocolate-colored eggs are often a novelty and popular with children and folks that own chickens.
White Egg Layers
The common store-bought white egg comes from Leghorn chickens, but there are other breeds that produce white eggs. These include Hamburg, Houdan, Jaerhon, Lakenvelder, Minorca, old English game and Polish chickens, to name a few. These chickens do not lay quite as much as Leghorn chickens do, but each of them were bred in different countries for different purposes. For example, old English game chickens were bred originally for cockfighting. Jaerhon chickens were bred in Norway to be cold hardy and early maturing. Polish chickens are bred as ornamental birds and not specifically for egg production.
Brown Egg Layers
Brown egg layers include Plymouth Rocks, Rhode Island Reds, New Hampshire Reds, Buckeyes, Chanteclers, Orpingtons and Wyandottes. Many breeds like the Plymouth rocks, the Rhode Island Reds and New Hampshire Reds are fairly prolific layers.
Green and Blue Egg Layers
Green and blue egg layers include the Ameraucana, Araucana and the Easter Egger. The Ameraucana and the Araucana lay blue eggs. The Easter Egger lays blue or green eggs. Occasionally, you'll find an Easter Egger that lays brown or pink eggs.The Easter Egger isn't considered a true breed, but rather a mixed breed or a breed developed by hatcheries.
Chocolate Egg Layers
Chocolate egg layers include Welsummers, Marans, Barnevelders or Penedesencas. Their eggs are anywhere from terra cotta to deep chocolate brown. Some are so dark that the egg color could almost be called dark chocolate.
